Coriander pulao


 Ingredients :

Basmati rice.                          -     1 cup

Cinnamon.                              -     1 inch piece

Clove and cardamom.          -     2 each

Onion.                                      -     2 medium sized

Tomato.                                   -      2

Potato.                                     -      3

Fresh peas.                             -      1/4 cup

Oil.                                           -      2 table spoon

Salt.                                         -       as per taste

To grind (masala) :

Coriander leaves.                -        1 bunch

Ginger.                                   -        1 inch

Garlic.                                    -         4 cloves

Green chillies.                      -         5

Grated coconut.                   -         1 cup

Method to prepare :

1) Soak the basmati rice for 20 minutes and drain after that. Also grind the masala and keep it ready.

2) Cut the onion and tomato and keep it aside.

3) Peel off the skin from the potato and cut it into square pieces.

4) Pour the oil in the pressure cooker and heat it in medium flame.

5) Add cinnamon, clove and cardamom and let it splutter.

6) Add the onion first and saute it till it becomes golden brown. 

7) Then add tomato and saute till it becomes mushy.

8) Next add the potato pieces, fresh peas and the masala and saute it till the raw smell of ginger and garlic is gone.

9) Then add the drained rice and pour 1 1/2 cup of water and salt and mix it and close the lid of the pressure cooker and put the weight.

10) After hearing one whistle, turn off the stove.

11) Open the cooker after 15 minutes. Your hot and tasty coriander pulao is ready.

Note : You can decorate the rice with cashews and peanuts fried in ghee (optional)
