Coconut milk biryani - Recipe

Ingredients : 

Basmati rice                       1 cup
Onion                                   2 (big sized) 
Green chillies                     5
Chopped vegetables          1 1/2 cups 
(Potato, capsicum, beans,
Cauliflower, carrot, fresh peas)
Coconut milk                       2 cups
Oil                                          1 1/2 table spoon 
Salt                                        As per your taste 
Bay leaf                                 1 
Clove                                      2 
Cardamom                            2
Coriander leaves                 1/4 cup 
Cashew nuts                         10 


Method of cooking:

1) Soak the basmati rice for 20 minutes and after that drain the water.
2) Grind the coconut with enough amount of water and squeeze the paste the get the coconut milk.
3) Pour the oil in a pressure cooker and after it gets heated, add bay leaf, clove, cardamom, chopped onion and green chillies. 
4) After the onion turns golden brown, add the vegetables and saute it for a while. 
5) Add coconut milk to the veggies and as soon as it starts boiling, add rice and salt.
6) Mix it well in a medium heat. 
7) Close the pressure cooker and put on the whistle.
8) As soon as you hear the first whistle, turn off the stove.
9) After 10 minutes, open the cooker and sprinkle fried cashews and finely chopped coriander leaves over the rice. 

Serve the dish with raita.
