Tomato fried rice - Recipe

Ingredients: 

Basmati rice                          1 cup 

Tomato                                   4 

Coconut milk                        1 cup 

Water                                     1/2 cup 

Onion                                     1 

Grated carrot                        1/4 cup 

Fresh peas                             1/4 cup 

Cashew nuts                          10 

Salt                                         As per taste 

To grind : 

Green chilli                           3 

Ginger                                   1/2 inch 

Garlic                                     4 cloves 


Method of cooking: 

1) Soak the rice for 20 minutes and then drain off the water. 

2) Grind 1/2 coconut (grated) with water. Then squeeze to take coconut milk.

3) Cook the rice in a pressure cooker with 1 cup of coconut milk and 1/2 cup of water. 

4) One whistle is sufficient. Turn off the stove.

5) Heat a pan and pour oil. After the oil gets heated, add chopped onion and saute it till it turns golden brown.

6) Add the ginger - garlic paste and saute for a while.

7) Then add finely chopped tomatoes, grated carrot and fresh peas and cook it in medium flame. 

8) Finally, add salt and cooked rice and saute in low flame. 

9) Fry cashew nuts in ghee and mix it with rice.

10) After it's been mixed, transfer the rice to a bowl and decorate the tomato fried rice with coriander leaves.

Take onion raita as side dish for this rice.
