Corn Pulav (I)

Ingredients:

Basmati rice                           1 cup 

Coconut milk                          2 cup 

Sweet corn                              2 numbers 

Oil                                             3 tea spoons

Salt                                            As per taste  

Bay leaf                                    1 

Cinnamon stick, clove          As per your taste 

To grind : 

Green chillies                         2 

Dried red chilli                      2 

Garam masala                       1/2 spoon 

Mint leaves                             1/2 bunch 

Ginger                                      1/2 inch 

Garlic                                        4 cloves 

Grated coconut                       2 table spoon 


Method of Cooking: 

1) Soak the rice for 20 minutes and drain off. 

2) Boil the sweet corn for 15 minutes.

3) Peel the corn and keep it separately.

4) Heat the pressure cooker, pour oil and let it become hot.

5) Add bay leaf, cinnamon stick and cloves and saute it.

6) Add the ground masala to it and saute it until an aroma arises from it. 

7) Then add sweet corn and coconut milk and slowly mix it up. 

8) After the coconut milk starts boiling, add rice and salt and stir it and close the lid of the pressure cooker.

9) Cook in medium flame. One whistle is sufficient.

10) Turn off the stove and wait for the pressure to get released.

11) Finally decorate with coriander leaves and fried cashews.
